One of the easiest recipes to make is guacamole and it’s so delicious! Do you have people coming over and you’re looking for the perfect dip that won’t take much of your time? Guacamole is the way to go. Remember, you don’t need to have a bunch of guests to enjoy guacamole, I tend to make this over the weekend and it lasts three days if covered well and kept in the fridge. One of my go to sides for guacamole is organic Matzo, why? Matzo is much cleaner than any chips I’ve found, with only two ingredients (organic wheat flour and water), I haven’t found one chip brand that beats the cleaness of this matzo. I tend to stick to the organic matzo from Manischewitz. We also pair the guacamole wit tacos, burritos, salads, sandwiches, rice dishes, and pitas. Honestly, guacamole goes well with mostly everything.
The following guacamole recipe does not have any spices, if you like spice, add in some chopped jalapeno, with the seeds, a dash or two of your favorite hot sauce, or some cayenne powder.
5 diced ripe avocados (peel and pit)
1 1/2 teaspoon sea salt
1/2 diced red onion
2 romato (plum) tomatoes, seeds and pulp removed, diced
In a medium bowl, mash together the avocados (leave a bit of texture), lime juice, and sea salt. Once you’ve mixed together your avocados, fold in your diced onion and tomatoes. That’s it! You can now refrigerate your avocado for about 1 hour for the best flavor, or serve immediately.
I mentioned this earlier, but if you desire heat, add in a chopped jalapeno pepper, a few pinches of cayenne pepper, or a dash or two (or more) of your favorite hot sauce; you can add this in when you fold in your onion and tomatoes.
