Chicken Empanadas

I lived in Colombia for some years and one of my fondest memories are eating Empanadas with my Grandfather; I can recall adding hot sauce to the Empanada and being in heaven. The beauty of Empanadas is that you can add any filling to them; I’ve added a mix of cheese and spinach, just cheese, chicken with potato, it’s limitless. For my Chicken Empanadas, I decided to do a more traditional version of the Empanadas that I have always loved, they are stuffed with a mix of potatoes, chicken, tomatoes, onions, and a mix of seasonings. Below is a picture of the delicious filling for our Chicken Empanadas.


I have made Empanadas countless of times before, but I had never made the actual Empanada shell, just the filling. I usually just buy Empanada discs at my local grocery store, but I really dislike the ingredients that are used in those premade Empanada discs. So, I decided that it was time to learn to make my own Empanada dough for my Chicken Empanadas. Making the dough was easier than I thought, it’s very similar to making a pie dough. Once you make your dough, you allow it to cool in the fridge for about an hour and then you flatten it out and make your discs.

After you make your dough and let it cool, you fill the Empanadas with the Chicken filling. Below is a picture of our ready to be baked Chicken Empanadas.

After baking in the oven, you will have delicious Chicken Empanadas. We topped our Chicken Empanadas with some Parmesan cheese in the last five minuts of baking. It came out amazing. Enjoy!
