I’ve been looking for some new ingredients to try out and looked through pinterest for some inspiration. I found a pin of Bobby Flay’s Miso Glazed Grilled Japanese Eggplant and decided to try my own version. I’m currently in love with Miso, which can be used for marinades, sauces, or the delicious and easy to make Miso Soup. My local Whole Foods didn’t have any Japanese Eggplant, but they did have some nice organic Eggplant. I wanted the Miso Glazed eggplant to have more than just Miso, so I added in a bit of of ginger and some beautiful scallions to the Miso for that hint of onion flavor.

Making Miso Glazed Eggplant was pretty easy, which is always a plus. I decided to bake the eggplant instead of grilling it, you just need to watch the eggplant as it’s in the oven, the eggplant is easy to burn. Once I baked the eggplant and added the glaze on top, I added it back into the oven for a quick broil, it’s ready in a few minutes and you can see from the images below how the Miso sauce gives it a beautiful glazed look. You can serve the Miso Glazed Eggplant on its own as an appetizer or you can serve it up as a side dish, we ate it as the main dish on a bed of steamed white rice. Max and I loved how the Miso Glazed Eggplant came out and can’t wait to make it again, baking the eggplant gave it a great texture. It’s always great when you make a new recipe and the results come out better than you had hoped. We hope you enjoy this recipe as much as we did!
