I worked in an Asian restaurant during college and the only thing that we could eat for free during our shifts was miso soup and onion soup. I loved both of the soups, but preferred the onion soup because it had vegetables in it, while the miso soup was just liquid. I never tried to make miso soup at home, but I thought I would give it a shot since Max loves to get miso soup in the rare times that we eat out, but he hates that tofu is an ingredient. I wanted the soup to be more than just liquid and to become a meal on its own. I added in mushrooms, green onions, and rice noodles. The soup came out delicious and it is so easy to make. Max and I loved the miso soup and enjoyed it much more than any other miso soup we have had. We hope you enjoy our miso soup version as much as we did.
