I lived in Bogota, Colombia when I was a little girl and there are a lot of foods that I remember from those years, and Fresas con Crema (Strawberries with Cream) was one of those foods. When we took road trips, we would stop at a bakery like store and get some Fresas con Crema before hitting the road. I was obsessed with this dessert and even today, my favorite cake is strawberry cake with extra cream and strawberries.
I decided that it was time to make my own version and wanted to add some fun layers, spelt pound cake for the texture and chocolate covered cashews for a sweet clean layer. We use organic raw cashews, there are no additives and the only ingredient is cashews. We use spelt for our pound cake because we fell our bodies prefer it over all-purpose flour. Remember, you can always use ingredients that you prefer and make changes were you see fit. The dessert came out bettered than I expected, I mean, take a look at the picture below. How awesome does that look?
If you want to save some time, you don’t have to create a pound cake layer, but I do advise you to add some chocolate covered cashews to the dessert, it elevates the flavor and you don’t miss out on that chocolate goodness that you want from a dessert.
